Spicy Seared Ahi Donburi Rice Bowl
Excellent meal!
On The Town in Night City
The porkchop was cooked to perfection, and the glaze on it added amazingly to it. The butternut squash and radish with the vinugrette was a great acidic balance to the prokchop, with the squash having a perfectly soft interior and crispy exterior. They could charge $10 more for the dish and I would order it again in an instant.

This bowl BLOWS MY MIND every time.
Decon Fakey 180
I love everything on the menu. You can't go wrong with anything. My favorite is the Decon Fake 180. It has shrimp that are huge and deconstructed California roll. The drinks are great. I like the lychee buck. The staff is super friendly. Highly recommend going.

Carthusian Sazerac
We loved everything about this bar from the moment we step through the doors. It was as if we were transported somewhere else, no longer in Colorado Springs, no longer in Colorado for that matter. Not even in 2024 actually. We had pork and chicken gyoza alongside our perfectly crafted cocktails, the carthusian sazerac and neuroma cer, while sitting at the bar. Exceptional customer service through and through as we tried to convince the owner he needed to open a location in Denver! Because this is exactly the kind of space that is missing and desperatly needed. It's not just a bar or restaurant it is an experience. An entire vibe. If you're visiting Colorado Springs or you're lucky enough to live near, I can guarantee you will have a night to remember at the Chiba Bar!

Chiba is the spot! Always excellent service and great food and drinks. Love the cyberpunk theme and the friendly atmosphere. The edamame dip and the spicy tuna bowl are delicious and definitely a rare find in Colorado. I've always had a good experience here.
